There is a great selection of snack foods available in Xining, which take influences from Muslim, Chinese and Tibetan cuisines. Fresh yoghourt, fried lamb tenderloin and roasted lamb are highly recommended, and can all be found all over the place. One of the interesting local traditions is that most of the region’s snacks are named after their creators.

Niangpi 酿皮
This dish is made from starch that has been separated from flour. It is cut into thin strips, seasoned and is usually served cold. It is slightly spicy and can be found almost everywhere in Xining. The most famous brand is Mazhong niangpi, and can be found on Mojia Jie.

This hearty soup is made with the head, heart, lungs, stomach and intestines of oxen and sheep. It is seasoned with hawthorn fruit and shallots. It is hearty and a winter favorite.

This fresh local yoghourt is locally made and is served in small pots for around 1RMB. A great choice for breakfast.
Ghee Tsampa (Suyou Ciba) 酥油糌粑
This dough is made with butter and flour, and is stir fried. A favorite of people in Tibet and Qinghai, it is a cheap, hearty snack.
Kebab (Leiba) 肋巴
A favorite of visitors and locals, this roasted mutton is simply seasoned and roasted over coals.
Thick Sliced Noodle Pieces (Mianpian) 面片
A local Hui snack, these noodles are soft and yellowish, served hot or cold with lamb.

Kao Yangrou (roasted mutton) 烤羊肉
These lamb skewers are grilled over an open flame and are best eaten immediately. A traditional Muslim snack that has been lovingly adopted almost everywhere in Qinghai.
